病院給食の実態
―６病院の調査を通して―

　山梨県内外の６カ所の病院を訪問し、病院給食の実態を聞き取り調査した。その結果、各病院毎に固有の特徴や問題点が明らかになると共に、現在の我が国の医療保険制度そのものに関わる問題点も浮き彫りにされてきた。これらを、(1)おいしい病院給食を提供する工夫、(2)病院における給食担当者の位置付け、(3)病院給食自己負担問題の３点に分けて論じた。また、医師ないし、医学生に対して栄養学の知識や理解を求める声も多く聞かれ、医療における食の重要性が指摘されている現状を考えると、医学教育における栄養学のあり方を改めて見なおす必要があると思われた。

Food Service in Hospital
- As Seen from Surveys at 6 Hospitals -

We have visited six hospitals inside and outside Yamanashi Prefecture to conduct an interview-based survey on the actual status of food service in hospitals. The present survey has not only revealed the existence of individual differences among hospitals and highlighted problems related to the food service, but also clearly showed the problems posed by the present Japanese health insurance system per se. We discuss here the above findings and related problems by classifying them into the following three items: l) measures taken to serve delicious hospital meals, 2) positioning of the workers in charge of providing meals in hospitals, 3) the issue of hospital meal payment at the patient's own expense. There has been an increasing level of opinion expressed urging physicians and medical students to be more knowledgeable and perceptive in the field of Nutrition, and this combined with empirical findings pointing to the importance of meals in medical care indicates the need to reconsider the positioning of nutrition in the sphere of medical education.
